Lactose intolerance occurs when your small intestine produces insufficient lactase enzyme to break down lactose (milk sugar) into absorbable glucose and galactose. Undigested lactose travels to your colon where bacteria ferment it, producing gas, bloating, cramps, and diarrhea. This is actually normal for most adults worldwide—lactase persistence (continuing production into adulthood) is a genetic adaptation in populations with dairy-farming history. The team perspective shows beautiful adaptation: your intestinal epithelial cells along the villi normally produce lactase, but genetic programming often decreases production after weaning (when milk isn't "expected" anymore). Meanwhile, your gut bacteria—opportunistic team players—will ferment available lactose, creating uncomfortable byproducts when overwhelmed by large amounts.
